Soon after, I was given a scare. Very few white blood cells and what were there, very odd shapes. Later the doctor told me that because of the times, they were worried at the time that it was Aids. I was tested but not told, came back negative. But what was it? Don't think they knew. But they slowly came back and looked good. I was tested for almost 2 years. I was given access to a dietitian through the hospital. She put me on a special diet of foods to eat. I have eaten that way since. Just a few ingredients, raised and sourced. Very simple and plain. Very few spices, some herbs from the flower garden and used as companion plants in vegetable garden. Many meals are just a vegetable, steamed, add a little butter and an herb. Fish tacos, smoked meat and fish. Farmer cheese, plain, with chives. Made from goats milk and vinegar, or make curd with lemon juice as a dessert, with fresh fruit. Tomato sauce is diced tomatoes, celery and onion, used in chili, with pasta, and to make stew. Pot roast with chicken, beef, bison, elk and pork loin. 1 cup water in pot on flame, start cooking in butter, add celery, onion, potatoes, cover with lid. Meat browned in skillet, de-glaze with water, add to vegetables....James
