In my country we have produced malting barley for years, for my own part 35+ years. The brewers are getting more and more demanding each year.
To the criteria you mention I can add:
"Sorting" which means how big a percentage will pass a 2,5 mm sieve without going through it. Supposed to be 90% or more. If less there will be a deduction of roughly 1% per. percentage less than 90.
Germination percentage and -energy.
Moisture content.
Screenings.
Cracked kernels.
The variety I have this year is tops except for Sorting where it has a hard time making 90%. We try to help this by using a very little amount of growth regulator.
What I do not like is that the brewers use all this criteria to impose a price reduction on us. I think the criteria should be used the other way around to give you a premium for a better quality. Feels a lot better for the grower to be able to get a premium instead of a reduction.
Problem is, like with most other crops, that we produce to a congested market. I guess you do the same.
